Coupage.

50% Cabernet Sauvignon – 35% Tempranillo - 15% Garnacha


Elaboration.

Once the grapes have been ground and destemmed, the grape juice is taken to stainless steel tanks together with the grape skins, where the fermentation and maceration process will take place during 18- 20 days. The wine is aged in American oak barrels of 225 litres for a period of 48 months, being later on bottled and stored in the dark for one more year before being released.


TASTING


Colour

JALOCO is a dark raspberry red wine with brick shades.


Nose

The wine shows the primary aromas of the grape varieties that constitute it: red fruits ( strawberry, raspberry, blackberry) as well as green pepper and vanilla.


Taste

The red fruits are still present together with new flavours. Tobacco, leather, coffee, milk. Long wine, soft but strong. Velvety and meaty. JALOCO is a wine that will last a long time in correct temperature conditions. It will develop towards more brownish colours due to its age and in nose and mouth it will acquire new aromas.


Recomendations:

JALOCO perfectly accompanies venison, veal, pork, wild ping, duck, mutton. Excellent with cured and Roquefort or blue cheeses.
